Make these in your oven broiler or in foil packets right on the grill!
Sweet Heat Potatoes
Ingredients:
- 4 lbs red potatoes
- 4 tbsp butter
- 2.5 tbsp honey
- 2 tbsp chili powder
- 1 tsp paprika
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
Servings: 12 people
Directions:
- You can make this in the oven or on the BBQ. If using the oven, preheat it to 400F
- Thoroughly rinse and scrub the potatoes, then cut them into quarters
- Place everything except for the potatoes in a small saucepan, and heat over medium heat until the butter is melted. Stir gently to combine everything well (you can also do this step in the microwave, just make sure you’re using a lidded, microwave-safe container)
- If cooking in the oven:
- Prepare one or two baking dishes with nonstick cooking spray
- Spread the potatoes in a thin layer across the bottom of the baking dish(es)
- Evenly pour the butter seasoning mixture over the potatoes
- Bake for 50 – 60 minutes in the oven, until the potatoes are tender
- If cooking on the BBQ:
- Use nonstick aluminum foil, and tear several large sheets. You’ll use these as packets for the potatoes. Alternatively, you can use the pre-packed foil pouches
- Divide the potatoes among the pieces of foil – place a bunch of potatoes in the center of each large piece of foil, leaving enough space around the edges so that you’re able to wrap them up
- Evenly pour the butter seasoning mixture over the potatoes
- Wrap the foil around the potatoes to make a closed pouch – be careful to not isolate the butter mixture away from the potatoes
- Place the foil packets on the grill for 30 – 40 minutes, until the potatoes are tender
- Serve and enjoy!
